Yes, teapsules might be more convenient than teabags, but our n1 focus is on flavour. We use innovation to honour and develop gastronomical tradition, always placing flavour first. In doing so, we hope that Greeks and foreigners alike will come to appreciate Greek herbs as quintessential to Greek gastronomy once again. The Italians have espresso, the Japanese have green tea, us Greeks have herbal tea.
In December, we held our pre-launch event at Estiatorio Milos Athens. Mr. Spiliadis, the man behind the Milos Empire, has been a pioneer in bringing authentic Greek seafood to the international culinary scene. Since the beginning, he has honoured the simplicity and purity of ingredients, be it the fish, the tomatoes, or even the herbs. For this reason, we were beyond honoured to host Teapsule’s Pre-Launch Event at Milos. The team tactfully and graciously created six small dishes for each of our six flavours. Classics like the “Milos Special,” composed of fried eggplant and zucchini slices, were topped with rock rose salt. The shrimp risotto was cooked in a lemon verbena and basil broth, while the vanilla creme brulee was infused with chamomile. Beyond incorporating herbs into dishes, our proposition is that Greek meals end with herbal tea.
This is perhaps the most obvious yet overlooked use for Greek herbs. However, we wanted to go one step further. To do so, we collaborated with Mr. Kiakos, also known as the Gin Father, barkeeper at To Lokali. Together, we created a life cycle of six drinks for our six flavours to pair with Milos’s six dishes. We started with spearmint on ice, which is exactly what it sounds like: a spearmint teapsule and ice. We progressed with a lemon verbena ice tea made with a lemon verbena teapsule, honey, lemon, and ice. Then came our three signature cocktails, all made with Greek spirits, either Greek gin (of course) or tsipouro. Finally, we closed with warm chamomile tea, the most nostalgic of flavours to all. If nothing else, by the end of the night it had become clear that there is truly an untouched versatility in Greek herbs.
